INGREDIENTS

Filling

  • 6 to 7 ripe peaches, peeled and sliced
  • ½ cup granulated sugar
  • ½ teaspoon cornstarch
  • ½ teaspoon vanilla extract
  • ½ teaspoon ground cinnamon

Topping

  • 1 cup all-purpose flour
  • ¼ cup granulated sugar
  • ¼ cup brown sugar
  • 1 teaspoon baking powder
  • ¼ teaspoon salt
  • ¼ cup melted butter
  • ¼ cup water
  • ½ teaspoon vanilla extract

INSTRUCTIONS

  • Preheat the Air Fryer: Set your air fryer to 350°F (175°C) and allow it to preheat while you prepare the filling and topping.
  • Prepare the Peach Filling: In a mixing bowl, combine the sliced peaches, granulated sugar, cornstarch, vanilla extract, and ground cinnamon. Gently toss until the peaches are well-coated.
  • Divide the Filling: Once the peach filling is ready, distribute it evenly among individual ramekins, filling each ramekin about three-fourths full.
  • Create the Topping: In a separate bowl, whisk together the all-purpose flour, granulated sugar, brown sugar, baking powder, and salt. Add the cold dairy-free butter or margarine and use a pastry cutter or your fingers to cut it into the dry ingredients until the mixture resembles coarse crumbs. Pour in the water and vanilla extract, and stir until just combined.
  • Top the Cobbler: Spoon the topping mixture over the peach filling in each ramekin, covering the peaches entirely.
  • Air Fry the Cobbler: Place the ramekins in the preheated air fryer and cook for approximately 15-20 minutes, or until the topping turns golden brown and the filling is bubbling. Keep a close eye on the ramekins towards the end to avoid overcooking.
  • Cool and Serve: Carefully remove the ramekins from the air fryer and let them cool for a few minutes. Serve the individual peach cobblers warm, and if desired, add a scoop of ice cream or a drizzle of caramel sauce to each ramekin.

NOTES

  • Ramekin Selection: Choose ramekins that have a capacity of about 6 to 8 ounces (180 to 240 ml). This size is ideal for individual servings and allows for proper cooking and rising of the cobbler.
  • Grease the Ramekins: To prevent sticking, lightly grease the ramekins with non-stick cooking spray or a small amount of dairy-free butter before adding the peach filling. This will make it easier to serve the cobbler once it's cooked.
  • Evenly Distribute the Peach Filling: When dividing the peach filling among the ramekins, aim for equal amounts in each ramekin. This will ensure consistent cooking and balanced flavors in each serving.
  • Fill Three-Fourths Full: Leave some room in the ramekins for the cobbler topping to expand while baking. Filling the ramekins about three-fourths full allows for proper rising and prevents overflow.
  • Maintain Even Topping Thickness: When spooning the cobbler topping over the peach filling, aim for an even thickness across each ramekin. This will ensure that the topping cooks evenly and achieves a golden-brown color throughout.
  • Adjust Cooking Time: The cooking time for individual ramekins may vary from the original recipe. Start with a slightly shorter cooking time of around 15-20 minutes, and check for the desired golden-brown topping and bubbling filling. Keep in mind that cooking times can differ depending on your specific air fryer model.
  • Cool and Settle: After removing the ramekins from the air fryer, allow them to cool for a few minutes. This will help the filling set slightly and make it easier to handle and serve without being too hot.
  • Serve with Finesse: For an added touch of elegance, you can dust the tops of the individual peach cobblers with powdered sugar or garnish with a sprig of mint before serving. This enhances the presentation and makes the dessert even more visually appealing.
