In a dish, mix together the vanilla, powdered sugar, and softened cream cheese. Using a hand mixer, blend on medium speed until mixed.
To facilitate spreading, reheat the caramel dip in the microwave for 15 to 20 seconds.
In a shallow bowl, spread the cream cheese mixture evenly.
Cover the cream cheese mixture with the caramel sauce. To ensure that all of the cream cheese is covered, spread evenly.
If desired, garnish with chopped pecans (or peanuts or walnuts) and a little more caramel topping.
Serve with graham crackers, pretzels, ginger snaps, and freshly cut apples. Have fun!
To prevent the apples from browning, cut them just before serving. Or add a bag and a small amount of lemon juice!
You'll save a ton of work if you let the cream cheese cool to room temperature before combining!
Warm up the caramel. In order to make spreading easier, I like to microwave thicker caramel for 15 seconds.
Simply smash Heath or Skor candy bars in a food processor or cut them into little pieces with a knife if you are unable to locate toffee bits.
Chill time: This dip tastes fantastic immediately but will get even thicker as it cools. If you have time, I suggest at least an hour.
