INGREDIENTS

  • 8  oz 225g Brie cheese
  • 1 tablespoon unsalted butter
  • 2 clove garlic minced
  • 1 teaspoon fresh thyme chopped
  • 1 teaspoon fresh rosemary chopped
  • 1 teaspoon fresh parsley chopped
  • 2 tablespoons honey plus more for drizzling
  • Crackers or toasted bread for serving

INSTRUCTIONS

  • Sauté the garlic – In a very small pan on very low heat, melt your butter and add your garlic, thyme, rosemary and parsley. Cook until the garlic is fragrant and golden, then cool for a moment.
  • Whip the Brie – Remove the rind from the Brie and cut into small chunks and place it in the food processor. Blend until the cheese is light, smooth and fluffy.
  • Top the Brie with the Garlic Mixture — Spoon the whipped Brie into a serving dish and spread the warm buttery sautéed garlic and herbs all over the surface. I recommend letting it sit for a few minutes for the flavors to meld.
  • Drizzle with Honey – Next, drizzle more honey onto the Brie piece, allowing it to seep into the garlic and herbs (this gives a nice balance of sweet and savory in the finished product).
  • Serve & Enjoy – Garnish with additional fresh herbs if desired, and serve with crackers or toasted bread for the coveted creamy, flavorful bite.

NOTES

  • Use Room Temperature Brie – Allow the Brie to come to room temperature before whipping for a smooth, creamy texture.
  • Don’t Burn the Garlic — Sauté the garlic very gently so it doesn’t burn, which would give it a bitter flavor.
  • Serve Fresh for Best Texture – Although they can be stored, whipped Brie is the creamiest and fluffiest served straight from the bowl.
