These cottage cheese egg bits, inspired by Starbucks' fluffy egg bites, are an excellent high-protein meal prep alternative for hectic mornings. All it takes is 15 minutes of preparation to create the ideal accompaniment to a nutritious breakfast.
Lightly lubricate a silicone muffin tray and preheat the oven to 350 degrees Fahrenheit. To make sure the egg bits slide off of the tray smoothly after baking, I prefer to use non-stick cooking spray, but a little oil would also do!
Put the eggs, cottage cheese, and seasonings in a powerful blender. Blend until it's smooth.
Pour approximately ¼ cup of the egg mixture into each cavity of the silicone muffin tin.
Place the selected mix-ins and cheese on top of each cup. Gently stir the toppings into the egg cups using the back of a spoon. For each cup, you could wish to top it with a little more cheese.
Bake for 18 to 22 minutes, or until the eggs appear set and the egg cups are no longer jiggly. Before taking them off the tray, let them cool a little.
