These cottage cheese egg bites, inspired by Starbucks' fluffy egg bites, are an excellent high-protein meal prep alternative for hectic mornings. All it takes is 15 minutes of preparation to create the ideal accompaniment to a nutritious breakfast.
As a nutritionist, I'm constantly trying to come up with new, simple, meal prep-friendly dishes to help you stop skipping breakfast on hectic mornings. Readers have long favored recipes like a protein-rich chia pudding, savory breakfast muffins, egg bars, and high-protein overnight oats. But I'm always working on new recipes to help you reach your protein targets and get your day started!
I knew I had to attempt making the Starbucks egg bits at home for you after I experienced them for the first time a few years ago as a quick and easy choice at the airport! If you want something tasty, convenient, and high in protein, these cottage cheese egg bites are the ideal choice. They are far less expensive and have the same fluffy feel, but you can easily personalize them with any topping you like!
You won't regret preparing a batch of these this week for a simple breakfast meal prep!

Why This Recipe Is Dietitian Approved
- Preparing savory meals. Lately, I've been really into savory breakfasts. Don't get me wrong, I still enjoy chia puddings and overnight oats, but as the weather has cooled, I've been reaching for a warm, cozy breakfast. These protein-dense cottage cheese egg nibbles are ideal for busy weeks and can be prepared in advance!
- A rapid protein source. A high-protein breakfast has been shown to improve hunger and fullness levels throughout the day. Each cottage cheese egg bite requires less than 15 minutes of preparation and has 7g of protein, making them ideal for hectic mornings.
- Adaptable. I adore recipes that let you make do with what you already have. Make your own version of these egg bites by adding whatever leftover meat or vegetables you happen to have in the fridge.
Ingredients
This Cottage Cheese Egg Bites recipe requires only a few simple ingredients:
- Eggs. A popular breakfast or an excellent dose of full protein! As a dietician, I enjoy incorporating whole eggs into my diet to receive extra nutrients like choline, ion, and vitamin D. I have not tried this recipe with just egg whites, but if you do, do let me know how it turns out.
- Cottage cheese. We adore cottage cheese here! Not only is it a flexible food due to its mild flavor, but it is also an excellent source of protein! Blending the cottage cheese into the eggs provides the fluffiest egg bites while also adding structure to keep them from deflating! Any fat percentage will work, however I normally go with 0% to keep the fat level low on these egg bits.
- Cheese. For additional flavor. I enjoy adding cheese to my egg bites. Cheddar cheese or feta cheese work best, but be creative!
- Spices. Salt, black pepper, garlic, and onion powder are the only seasonings required for this simple dish.
- Mix-ins. These cottage cheese egg bites are an excellent choice for a simple, customizable meal. Take advantage of the vegetables in your fridge to simply improve their nutritional value, or add some leftover meat like chicken, or sausage for extra protein!
The recipe card below contains the whole ingredient list, including measurements.
Instructions
- before to starting. Lightly lubricate a silicone muffin tray and preheat the oven to 350 degrees Fahrenheit. To make sure the egg bits slide off of the tray smoothly after baking, I prefer to use non-stick cooking spray, but a little oil would also do!
- Step 2: Put the eggs, cottage cheese, and seasonings in a powerful blender. Blend until it's smooth.
- Step 3: Pour approximately ¼ cup of the egg mixture into each cavity of the silicone muffin tin.
- Step 4: Add the selected mix-ins and cheese to the top of each cup. Gently stir the toppings into the egg cups using the back of a spoon. For each cup, you could wish to top it with a little more cheese.
- Step 5: Bake for 18 to 22 minutes, or until the eggs appear set and the egg cups are no longer jiggly. Before taking them off the tray, let them cool a little.
Substitutions and Variations
- Gluten-free. Good news! You can create gluten-free! These egg bites with cottage cheese are already gluten-free.
- To make dairy-free: Try a spinach and feta egg cups (omitting the feta cheese) for a simple dairy-free alternative if you want to avoid the cottage cheese in these egg bites!
- To make vegetarian: A fantastic source of protein for vegetarians are these egg and cottage cheese egg bites.
- Nut-free. To eliminate nuts: There are no nuts in this recipe by nature.
Flavor variations
The best thing about this recipe is how simple it is to modify. Make cottage cheese egg cups that you like using whatever meats, cheeses, and vegetables you have on hand.
The following flavor choices were influenced by Starbucks' egg bites:
- Spinach and feta. Add chopped fresh or frozen spinach that has been defrosted and drained, then top with feta cheese.
- Kale and mushroom. Add finely chopped kale and diced mushrooms to the mixture.
- Roasted red pepper and cheese. Cheese with roasted red pepper: add some cheddar cheese and either homemade or canned roasted red peppers.
Equipment
A powerful blender that will make blending the cottage cheese and eggs a snap!
Silicone muffin tray: I strongly advise using a silicone muffin tray for convenience and speedier cleanup! But I tested this recipe on a metal pan.
Storage
Cottage cheese egg bits can be kept in the refrigerator for up to five or six days after cooling in an airtight container. To guarantee maximum freshness, I advise storing the egg bites for no more than three to four days if you decide to include cooked meat as one of your toppings.
I would advise against freezing these!
Top Tips for Success
Take note of this important piece of advice if you want to prepare this dish!
- Using a silicone muffin tray is something I strongly advise.
- Remember that the cook time may change a little based on the toppings and/or mix-ins you choose. More juicy vegetables could take a little longer to cook!
