INGREDIENTS

  • 4-6 boneless skinless chicken breasts
  • 1.5 lbs baby potatoes halved
  • 4 cloves garlic minced
  • 1 cup chicken broth
  • 1 cup grated Parmesan cheese
  • 1 cup shredded mozzarella cheese
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper to taste
  • Fresh parsley for garnish

INSTRUCTIONS

  • Set Up Your Crockpot First things first: Spray the inside of your crockpot with nonstick cooking spray (this will ensure your breakfast won't stick or be difficult to clean up afterwards).
  • Layer Ingredients: Add halved baby potatoes to the bottom of the Crockpot (you want a solid layer at the bottom). Place the chicken breasts on top of the potatoes.
  • Taste seasoning: In a small bowl, stir minced garlic, dried thyme, dried rosemary, salt and pepper together. Scatter this seasoning lightly all over the chicken and potatoes.
  • Add Liquid: Now you add the chicken broth to the mix in the Crockpot. "It adds to the moisture and flavour of the dish."
  • Cook Time: Next, set the Crockpot on low to cook for 6-8 hours or on high for 3-4 hours. It’s absolutely great for the cold months– I prepare it slow-cooker style so that the flavors have time to meld, and the chicken and potatoes get nice and soft.
  • Cheesy Finish: 30 minutes before serving, sprinkle chicken and potatoes with Parmesan and mozzarella cheeses. Put on Crockpot lid until the cheeses are melted and become the best gooey, cheesy topping.
  • Garnish and Serve: Once finished with the cooking, garnish the dish with fresh parsley for a wonderful pop of color and extra freshness! Enjoy the amazing flavor and serve the Crockpot Garlic Parmesan Chicken and Potatoes hot.
