Homemade Buffalo Sauce

INGREDIENTS

  • 1 cup Frank's RedHot sauce
  • 3 tablespoon white vinegar
  • ½ teaspoon paprika
  • ½ teaspoon garlic powder
  • ½ teaspoon chili powder
  • 1 teaspoon Worcestershire sauce
  • ½ cup unsalted butter
  • salt

INSTRUCTIONS

  • Remove the butter from the refrigerator, unwrap it, and cut it into tablespoon-sized pieces. Place aside.
  • Combine the spicy sauce, vinegar, Worcestershire sauce, pepper, garlic powder, and paprika in a saucepan over medium-low heat.
  • Allow the mixture to warm through and begin to steam, but do not allow it to boil. Stir it often.
  • Remove the skillet from the heat when the sauce begins to steam and just begins to boil.
  • Add the butter to the spicy sauce and whisk vigorously to combine as the butter melts.
  • As the butter melts, the sauce will cool somewhat, but it should be warm enough to thoroughly melt the butter bits.
  • If desired, season with a dash or two of salt.

NOTES

  • The warm sauce can be served over wings, pulled pork, or as a dipping sauce
  • Any leftovers should be refrigerated. The sauce will thicken somewhat as it is refrigerated (because the butter will harden again). Simply reheat the mixture in small amounts in the microwave.
  • This recipe yields enough to cover 5 pounds of wings plus extra for dipping.
