Oven Roasted Yukon Gold Potatoes

These super crispy Oven Roasted Yukon Gold Potatoes are perfect for a quick weeknight dinner. It is super easy to prepare and only requires a few simple ingredients to make.

INGREDIENTS

  • 2 pound Yukon gold potatoes , cleaned and cut in half
  • 1 ½ tablespoon Salt
  • cup Olive oil
  • 4 Cloves garlic, minced
  • 1 ½ teaspoon Thyme
  • 1 teaspoon Salt
  • ½ teaspoon Black pepper
  • Pinch of fresh black pepper

INSTRUCTIONS

  • Preheat oven to 425Fº, and bring to a boil a large pot of water with 2-3 tablespoons of salt.
  • Clean the potatoes under tape water, and slice them in halves.
  • Then add the potatoes to the boiling water and cook for about 15 minutes. Check the potatoes for tenderness with a toothpick or a fork.
  • Remove from the heat and drain everything. In a large glass bowl mix the cooked potatoes with olive oil, salt, fresh ground black pepper, and thyme.
  • Transfer to a baking sheet and drizzle with more olive oil so that the potatoes won't stick to the pan.
  • Bake the potatoes for 30 to 35 minutes. Remove from the oven and Serve!

NOTES

  • I don't recommend using aluminum foil on top of the potatoes, as it does not gonna give you that crispiness on top.
  • It's simple to add some roasted baby carrots to this recipe. They can all be placed on the same pan, although carrots will cook more quickly.
  • Why don't the potatoes brown? Try raising the heat in your oven to 450F, but keep an eye on it.
  • When you flip the potatoes over the first time, they might not be browned. They should brown when turned over during the final 15 minutes of cooking if your oven is functioning properly.
