- ⅓ cup Olive oil
- 4 Cloves garlic, minced

- Preheat oven to 425Fº, and bring to a boil a large pot of water with 2-3 tablespoons of salt.
- Clean the potatoes under tape water, and slice them in halves.
- Then add the potatoes to the boiling water and cook for about 15 minutes. Check the potatoes for tenderness with a toothpick or a fork.
- Remove from the heat and drain everything. In a large glass bowl mix the cooked potatoes with olive oil, salt, fresh ground black pepper, and thyme.
