    Why You'll Love This Recipe

    • Easy crockpot meal: This recipe is super easy to make, filling, and delicious!
    • Basic ingredients: It's made with basic ingredients you probably already keep stocked in your pantry and refrigerator.
    • Great for cold months: The slow cooking process lets flavors fully meld, and the chicken and potatoes come out wonderfully tender - perfect for a cozy winter dinner.

    Ingredients

    • Boneless skinless chicken breasts: The star of the dish, tender and flavorful after hours in the slow cooker.
    • Baby potatoes: Halved, so they cook evenly and soak up all the delicious flavors in the crockpot.
    • Garlic: Freshly minced garlic gives a bolder flavor, but jarred minced garlic is a convenient alternative.
    • Chicken broth: Keeps the chicken moist and helps the potatoes cook through.
    • Grated Parmesan cheese: Please use freshly grated Parmesan cheese, and don't skimp!
    • Shredded mozzarella cheese: Grate a block of mozzarella yourself for a creamier melted cheese.
    • Dried thyme: A warm, earthy herb that seasons the chicken and potatoes beautifully.
    • Dried rosemary: Adds a fragrant, savory depth to the overall dish.
    • Salt and pepper to taste: Season the chicken and potatoes to your liking.
    • Fresh parsley for garnish: Adds a wonderful pop of color and extra freshness.

    Instructions

    1. Set Up Your Crockpot. Spray the inside of your crockpot with nonstick cooking spray so your meal won't stick or be difficult to clean up afterwards.
    2. Layer Ingredients. Add the halved baby potatoes to the bottom of the crockpot in a solid layer. Place the chicken breasts on top of the potatoes.
    3. Season. In a small bowl, stir minced garlic, dried thyme, dried rosemary, salt and pepper together. Scatter this seasoning lightly all over the chicken and potatoes.
    4. Add Liquid. Pour the chicken broth into the crockpot.
    5. Cook Time. Next, set the crockpot on low to cook for 6-8 hours or on high for 3-4 hours, until the chicken is cooked through and the potatoes are fork-tender.
    6. Cheesy Finish. 30 minutes before serving, sprinkle chicken and potatoes with Parmesan and mozzarella cheeses. Put the crockpot lid back on until the cheeses are melted and become the best gooey, cheesy topping.
    7. Garnish and Serve. Once finished with the cooking, garnish the dish with fresh parsley for a wonderful pop of color and extra freshness. Enjoy the amazing flavor and serve the Crockpot Garlic Parmesan Chicken and Potatoes hot.

    Tips and Variations

    • Adjust cooking time: Depending on the size of your potatoes, they may need additional time in the crockpot. All crockpots cook differently, so adjust the cooking time as needed.
    • Add vegetables: Sliced onions or baby carrots can go in with the potatoes for extra flavor.
    • Serving suggestions: I like serving this recipe with a salad, roasted broccoli, or some green beans.

    FAQs

Can I use different types of potatoes?

You can use baby potatoes cut into quarters or russet potatoes cut into cubes for this dish.

Do you use a liquid in the crock pot while cooking?

Yes, 1 cup of chicken broth keeps the chicken breasts moist and helps the potatoes cook through.

Can I make this with frozen chicken and just increase the time?

It's best not to. Frozen chicken can spend too long in the temperature danger zone in a slow cooker, so thaw it completely in the refrigerator first.

    Does this freeze well?

The chicken freezes well for up to 3 months, but the potatoes turn grainy once frozen, so it's best enjoyed fresh. Leftovers keep in an airtight container in the fridge for 3 to 4 days.

How do I know when the chicken is fully cooked?

Cook on low for about 6 hours, or until the potatoes are soft and the chicken is at least 165 degrees.
