    Vegetable Soup with Ground Beef

There’s something so comforting, you just know you’re serving a childhood memory each time you put a warm bowl of Vegetable Soup with Ground Beef in front of your loved ones. This recipe became a staple in our house on cold nights: My home growing up was filled with the warm scent of bubbling soup. It was uncomplicated, sustenance, and always brought everyone to the table.

When I began to cook for myself, I discovered how much I enjoyed the versatility of this soup. It’s filled with punchy vegetables, toothsome beef and a richly flavored broth that builds with each slurp. Worcestershire sauce adds just enough depth to make it feel special.

This soup is my such an easy go-to dish for busy weeknights or when I want something comforting to eat. It’s simple to prepare, fills the house with a delightful scent and reminds me of home’s warmth. But any time of year, there’s nothing like a bowl of this soup to feel like a hug in a bowl.

    Main Ingredients

ground beef, beef broth, fresh vegetables, diced tomatoes, tomato sauce and seasonings
    • Ground beef — The central protein source, making it hearty (ground meat adds lots of umami depth), with a bit of chewiness that makes the soup more filling.
    • Olive oil — To sauté the vegetables, softening them and drawing out their flavors, and adding a touch of richness.
    • Onion – A basic aromatic that adds a deep savory-sweet flavor when it caramelizes, building the overall flavor of the soup.
    • Garlic — Builds warmth and a touch of pungency and nuttiness that adds to the complexity of the broth.
    • Carrots – Provide natural sweetness and mild crunch, complementing the savory elements of the soup.
    • Potatoes — Soak up the soup’s flavors while adding a creamy, filling texture that makes each spoonful more substantial.
    • Green beans — Add fresh, slightly crunchy texture and grassy flavor to cut through the richness of the beef and broth.
    • Diced tomatoes — Add brightness, acidity, and a juicy texture, which all contribute to a balanced and flavorful broth.
    • Beef broth — Creates the soup’s liquid base, imparting savory, meaty depth to all other ingredients while maintaining some comfort and warmth to the dish.
    • Worcestershire sauce — Serves as a secret flavor booster, offering a tangy, mildly sweet and umami-packed richness that lifts the beefy flavor.
    • Italian seasoning, Thyme — A blend of dried herbs, this adds a cozy, aromatic warmth to the soup, and a balanced flavor with herbs like oregano, basil and thyme.
    • Salt and pepper – Must haves for building up and balancing all the flavors and tasting good.

Instructions to Make Ground Beef Vegetable Soup

    1. Brown the beef – In a large pot or Dutch oven, heat olive oil over medium heat. Add the ground beef and cook, breaking it up as it browns. If needed, drain any excess fat.
    2. Sauté the Aromatics – Stir chopped onion, garlic, carrots, and celery into the pot. Let cook for a few minutes until the vegetables are softened and fragrant.
    3. Adding the Base Ingredients – Mix in the diced tomatoes, tomato paste, Worcestershire sauce, and Italian seasoning. Allow everything to cook for a couple of minutes to combine flavors.
brown ground beef and onions in dutch oven
    1. Add the Broth & Simmer – Add broth, potatoes, green beans, and corn. Add a bay leaf, season with salt and pepper and bring the soup to a gentle boil.

    1. COOK UNTIL TENDER – Lower the heat to a simmer and cook the soup for 25–30 minutes, or until the potatoes and vegetables are tender. Stir occasionally.
mix green beans and tomatoes into vegetable soup
    1. Taste & Serve – Discard the bay leaf, taste and add salt, and/or pepper if necessary. Serve warm, optionally topped with fresh herbs or a sprinkling of cheese.

    Storing And Reheating

Keep any leftover Ground Beef Vegetable Soup in an airtight container in the fridge for up to 4 days or frozen for 3 months.

For reheating, heat it on the stovetop over medium heat, stirring every now and again, until warmed through. If using a microwave, use short bursts of heat, stirring between, to warm evenly.

    Pro Tips

    • Brown the Beef Well — Allow the ground beef to brown deeply before adding anything else, to build the soup’s rich savory flavor.
    • Layer the Flavors — Sautéing the onions, garlic and vegetables before adding in the broth helps build in depth and enhances their natural sweetness.
    • Let It Simmer — Let the soup simmer for a minimum of 30 minutes to allow the flavors to mingle for a more full-bodied flavor.
    • Make It Yours — Substitute or add vegetables according to what’s in season, and for more broth goodness, stir in a splash of heavy cream or a handful of grated cheese before serving.

    Variations and Substitutions

    • Protein Swap — Switch ground beef for ground turkey, chicken or even plant-based crumbles for a lighter or vegetarian-friendly option.
    • Low-Carb Version — Leave out the potatoes and the corn, and add in more low carb veggies such as zucchini, spinach, or cauliflower for a keto-friendly spin.
    • Flavor Boost — Add a splash of hot sauce or a pinch of smoked paprika for extra depth, or stir in a can of beans for added texture and protein.
