- Beef: I prefer to use at least 90% extra lean ground beef.
- Onion: Vidalia (sweet) onions are preferred in our cuisine.

- I usually keep garlic powder and chili powder in my cabinet because they are our go-to seasoning blend for adding delicious flavor.
- Pasta: The traditional pasta shape for this is elbow macaroni.
- Beef Broth: Use beef broth to give the sauce a fuller, more complex flavor.
- Cheese: Sharp cheddar cheese adds just enough creaminess to my version of hamburger helper without the need for milk, making it even easier!
Pro tip
Recipes for one pot can vary based on your stove and ingredients, so feel free to add a little more if you seem to be running out of liquid with plenty of time left. One half cup at a time, try.
How to make Hamburger Helper

In a large pot, first cook the meat and onion, then drain off any extra fat. Next, add the tomato paste, chili powder, and garlic powder. Bring the mixture to a boil after adding the beef broth. Add the uncooked macaroni and stir once it reaches a boil.
Cook until the pasta is soft and most of the liquid has been absorbed, stirring occasionally. As it simmers, grate the cheddar cheese. Add the cheese and season with salt and pepper to suit.
Substitutions and variations
- Feel free to adjust the seasonings to suit your preferences. To get it just right for your palate, you can always add extra garlic, crushed red pepper flakes, hot sauce, chili powder, and more!
- There are readers who prefer to sneak in a little spinach. Simply stir it in close to the end of cooking until it wilts. Bell peppers sliced finely would also be excellent.
- Switch up the type of cheese if you want to add some flair. Some interesting varieties include Monterey Jack, smoked cheddar, etc.
- If you like, you can use ground chicken or turkey in its place.
- It might be necessary to modify the liquid proportions and/or cooking time if you wish to use a different pasta form, like shells (this has only been tried with macaroni).

Leftovers and storage
- Leftovers of this Hamburger Helper will stay in the fridge for 3-4 days in an airtight container, but bear in mind that the spaghetti will continue to absorb the broth over time. But it will still taste good.
- For optimal results, reheat in a small saucepan over low heat, stirring occasionally, until well heated. If desired, thin with a little beef broth.
- Freezing leftovers is not something I advise. When cooked pasta is thawed, its texture changes.

Homemade Hamburger Helper Recipe
INGREDIENTS
- 1 pound extra lean ground beef
- ½ medium onion chopped
- 3 tablespoons tomato paste
- 1 teaspoon garlic powder
- 1 teaspoon chili powder
- 4 cups beef broth
- 1 ½ cup uncooked elbow macaroni
- 2 cups freshly grated cheddar cheese
- ½ teaspoon salt
- ½ black pepper
INSTRUCTIONS
- Put the steak in a soup pot with the onions. Break up the beef with your spoon as you cook it over medium-high heat until it has browned, about 7 to 10 minutes. Spoon out most of the surplus fat if there is a lot of it.
- Add the chili powder, garlic powder, and tomato paste and stir.
- Turn the heat up to high and add the beef broth. Add the macaroni as soon as it begins to boil.
- Lower the heat to a quick simmer rather than a raging boil. In the end, I cooked mine on medium heat. Cook it uncovered for 13 to 15 minutes, or until the pasta is soft and most of the liquid has been absorbed. I give it a stir every few minutes.
- To save time at the beginning of the recipe, grate the cheese while it's cooking.
- After turning off the heat, add the cheese and stir. Add salt and pepper to taste. It soaks up the sauce and tastes more if I let it sit for a few minutes before serving, but you may serve it immediately.
NOTES
- 4-6 servings, depending on the size of the portion.
- Ingredients and stoves vary, just like any one-pot dish. Feel free to add more liquid, ½ cup at a time, if you're running low on liquid (as in, it might stick and burn) and you still have some pasta to cook.
