What is a Jammy Egg?
A jammy egg is a soft-boiled egg with a slightly runny, custardy yolk and a firm but tender white. It’s the Goldilocks of eggs, neither hard-boiled nor soft-boiled, and versatile enough that you can use it as an ingredient in a lot of dishes.
Jammy eggs are a very livable egg: Unlike their fully hard-boiled counterparts, they have a rich, creamy center that adds plenty of depth and texture to a meal. They’re also great in ramen, salads and grain bowls and in a pinch they’re perfect eaten with a few flakes of salt and dash of pepper.
To make a jammy egg, you have to time it just so, generally about six to seven minutes in boiling water. After cooking, they’re plunged into an ice bath to halt the cooking process and guarantee a perfectly runny yolk.

- Eggs — The central ingredient, delivering protein and a rich, jammy yolk that contributes creaminess to dishes. Newer eggs are best for structure; older eggs peel better.

- Boil the water — Fill a pot with enough water to cover the eggs by at least an inch. Bring to a rolling boil over medium-high heat.
- Add the eggs — Gently lower the eggs into the boiling water with a spoon to avoid cracking.
- Set your timer — 6 to 7 minutes: How long for a perfectly jammy yolk.
- Fill a bowl with ice water – While your eggs cook, place ice and cold water in a large bowl.
- Transfer to ice bath Once the timer goes off, use a slotted spoon to immediately transfer the eggs into the ice water to halt the cooking process.
- Let them cool — Place the eggs in the ice bath for 5 minutes so that they’re easy to peel.
- Peel – You can lightly tap the eggshells on the surface of the counter, roll them lightly, or peel under running water for best results.
