How to Make Crockpot Chicken and Potatoes
The Ingredients
- Boneless, skinless chicken breasts: This is the protein, but it’s a lean and malleable protein, allowing the dish to take on whatever character we want it to. If you do not have chicken breast, you can also use skinless chicken thighs or boneless chicken thighs.
- Baby potatoes, halved: A starchy component to go with the chicken, and a real anchor to the meal. I used the Yukon gold for this recipe. You can try red potatoes as well.
- Minced garlic: Adds the bulk of the rich and fragrant flavors of the dish, giving it a more savory taste.
- Chicken broth – gives the ingredients much needed moisture and keeps both the chicken and potatoes extra moist as they cook slow all day. It also helps form the savory broth that forms as the dish simmers.
- Parmesan (Parmigiano Reggiano) cheese: adds rich, salty, umami flavor, making a deliciously cheesy coating for the chicken and potatoes.
- Shredded mozzarella cheese: Brings it on home with that gooey, melty feel and flavor that goes so well with the Parmesan and the rest of the cheesy goodness of cheesy chicken alfredo.
- Dried thyme and dried rosemary: These earthy and aromatic herbs do wonders for the overall flavor profile of the dish.
- Salt and pepper: If you don’t already know, just to bring out the taste, and watching all the pieces blend perfectly. You can also go so far as to include your favorite Italian seasoning for more flavor.
- Fresh parsley (for garnish) : Provides a pop of fresh flavor and a pop of color at the end, which works wonders for the overall presentation of the dish.
- Olive oil.
How To Make
- Prepare The Crockpot: To avoid sticking and to make clean up a breeze, spray the inside of your Crockpot with non-stick cooking spray.
- Step 3: Layer the Ingredients: Layer the halved baby potatoes on the bottom to form an even base. Place the chicken breasts over the potatoes.
- Seasoning: Combine minced garlic, dried thyme, dried rosemary, salt, pepper. Evenly sprinkle this seasoning over the chicken and potatoes.
- Pour In The Liquid: Pour the chicken broth over the ingredients in the Crockpot. This serves to moisten the dish and add additional flavor to it.
- Cooking Time: Cook on low for 6 – 8 hours or high for 3 – 4 hours. The long, slow cook time gives all the flavors a chance to meld and the chicken and potatoes plenty of time to become tender.
- Cheesy Finish: 30 minutes before serving, sprinkle the Parmesan and mozzarella cheeses over the chicken and potatoes. Place the lid on the crockpot and let the cheeses melt together into a hot, gooey blanket of yum.
- Garnish and Serve: After the cook time has finished, garnish with green, fresh parsley for a pop of color and extra good freshness. hot and enjoy the flavors of the Crockpot Garlic Parmesan Chicken and Potatoes!

Helpful Tips and Frequently Asked Questions
- Season the Chicken Well: You want to make sure each breast is covered with the seasoning mix for an even flavor throughout the dish.
- Use the Right Potatoes: I recommend baby potatoes or small potatoes, because they cook more evenly in the Crockpot. If your potatoes are bigger, then you'll want to dice them into smaller pieces and try to keep them all the same size.
- Season to Taste: Sample the seasoning mixture before sprinkling over chicken and potatoes. So, season with more salt, pepper, herbs, if you like.
- Opt for Fresh: Although dried herbs work great in this recipe, fresh herbs can really infuse their vibrant flavor into the dish. Taste and add them toward the end of the cooking if you’d rather they be fresher.
- Mix in Vegetables Wisely: When adding in more vegetables think about how long they take to cook. Include firm vegetables, such as carrots, in the beginning, and softer ones, such as spinach or peas, closer to the end.
Recipe Variations
- Sun-Dried Tomato Delight: It can be served with chopped sun-dried tomatoes for a little sweet and tangy addition to compliment the richness of the meal.
- Herb-Butter Finish Sprinkle a tablespoon of herbed butter over the top as you serve for a richer and more complex level of flavor.
- Paprika and Smoked Paprika Fantastic: Add a smoky dimension to your seasoning mix by adding a teaspoon of plain paprika and a dash of smoked paprika.
- Italian Sausage Medley: Add sliced Italian sausage for a hearty, savory spin! Use cooked sausage, or make sure the sausage is pre-cooked.
- Add Some Lemon Garlic Zing: right before you are ready to serve, juice a fresh lemon over it, and sprinkle some lemon zest to bring in some zing and zesty lemon flavor.
What to Serve with Crockpot Chicken and Potatoes
Pairing your Crockpot Garlic Parmesan Chicken and Potatoes with the right sides can elevate the overall dining experience. Here are some delicious options to consider:
- Steamed Vegetables: For a simple and healthy addition to your dinner, serve with a mix of steamed vegetables such as broccoli, fresh green beans or carrots.
- Side Salad: A crispy and fresh side salad, like this recipe with mixed greens, cherry tomatoes, cucumbers and lite vinaigrette can serve as a nice contrast to the richness of the chicken and potatoes.
- Garlic Bread or Baguette: Add some garlic bread or slices of baguette to the menu and have something warm and crusty on the side to soak up any yum juice.
- Roasted Vegetables: Roast some extra vegetables such as bell peppers, zucchini, and even cherry tomatoes for a tasty, caramelized touch on the side.
- Quinoa or Rice — You can also serve your chicken and potatoes over quinoa or rice, where it will soak up the delicious sauce to add a bit of bulk to your dish.
- Ranch: You can’t go wrong topping this tasty dish with some ranch!
Storage Tips
- Storage: Let the dish cool to room temperature, then store in airtight containers or resealable plastic bags. Mark the containers with the date it was prepared to keep track of freshness.
- Cool leftovers in the refrigerator within 2 hours of cooking, then if you plan on storing leftovers for longer, freeze them in freezer-safe containers and leave some space for expansion. These steps will also prevent your leftovers from drying out and keep them tasty when they’re reheated.
- Reheating: If frozen: Thaw in the fridge overnight before reheating. For small amounts, take refuge in the microwave and add a splash of water or chicken broth to keep things moist. Larger portions can even be reheated in the oven at 350°F (175°C) covered with aluminum foil and then uncovered for the last 10 minutes until the top is golden brown.
- Reheat on a stovetop over low to medium heat with a little broth, if needed. The chicken should be 165°F (74°C) in the middle for consumption. A sprinkle of fresh herbs or a squeeze of lemon after reheating can rejuvenate the vibrant flavors in the dish.

Crockpot Garlic Parmesan Chicken and Potatoes
Equipment
- Crockpot
INGREDIENTS
- 4-6 boneless skinless chicken breasts
- 1.5 lbs baby potatoes halved
- 4 cloves garlic minced
- 1 cup chicken broth
- 1 cup grated Parmesan cheese
- 1 cup shredded mozzarella cheese
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- Salt and pepper to taste
- Fresh parsley for garnish
INSTRUCTIONS
- Set Up Your Crockpot First things first: Spray the inside of your crockpot with nonstick cooking spray (this will ensure your breakfast won't stick or be difficult to clean up afterwards).
- Layer Ingredients: Add halved baby potatoes to the bottom of the Crockpot (you want a solid layer at the bottom). Place the chicken breasts on top of the potatoes.
- Taste seasoning: In a small bowl, stir minced garlic, dried thyme, dried rosemary, salt and pepper together. Scatter this seasoning lightly all over the chicken and potatoes.
- Add Liquid: Now you add the chicken broth to the mix in the Crockpot. "It adds to the moisture and flavour of the dish."
- Cook Time: Next, set the Crockpot on low to cook for 6-8 hours or on high for 3-4 hours. It’s absolutely great for the cold months– I prepare it slow-cooker style so that the flavors have time to meld, and the chicken and potatoes get nice and soft.
- Cheesy Finish: 30 minutes before serving, sprinkle chicken and potatoes with Parmesan and mozzarella cheeses. Put on Crockpot lid until the cheeses are melted and become the best gooey, cheesy topping.
- Garnish and Serve: Once finished with the cooking, garnish the dish with fresh parsley for a wonderful pop of color and extra freshness! Enjoy the amazing flavor and serve the Crockpot Garlic Parmesan Chicken and Potatoes hot.
