Artichokes were a frequent guest at my family’s supper table when I was a child in California. I was an adult before it occurred to me that people from other parts of the country didn’t even always eat artichokes.
When my husband moved here from the east coast, he learned about artichokes along with my habit of avocado on everything and my insistence on a green salad (with homemade vinaigrette, of course) every night with dinner.

- Artichokes Entire (Whole): Bake 25-30 minutes at 375°F (190°C). Turn the artichokes at the half-way point to make sure they are evenly crispy.
- Halved Artichokes: If you’ve halved the artichokes to cook them more quickly and evenly, the time can be 20 to 25 minutes or so. Again, rotate them at the halfway mark for even cooking.
Be sure to watch the artichokes as they cook, tweaking the timing to both the size and your air fryer’s particular peccadilloes. Freezing air fried artichokes is possible, but there are certain things that need to be done in order to keep them as flavorful and scrumptious as possible. Here’s how to store and freeze air-fried artichokes:
Storing Air-Fried Artichokes:
- Refrigeration: And if you’re not able to finish them all, simply place leftovers in a airtight container and store in refrigerator. If stored well, they should last you about 2-3 days.
- Avoid Moisture: You can leave a paper towel inside the container to catch any extra moisture that would force the artichokes to loose their crispness.
- Reheating: Reheat in an oven or toaster oven, to preserve the crispiness. Do not use a microwave or your artichokes will be mushy.
Freezing Air-Fried Artichokes:
- Cool Completely: The air-fryer artichokes must cool completely before freezing. That helps reduces condensation and ice crystals during freezing.
- Freeze on a Single Layer: Place all your cool artichoke pieces in a single layer on a baking sheet. First they are frozen in a single layer so they don’t stick.
- Freeze: Place the baking sheet in the freezer and freeze the artichokes for 1-2 hours.
- Transfer to Freezer Bags or Containers: After they're individually frozen, transfer the chunks of artichoke to freezer safe bags or containers. This process will keep food free from freezer burn and retain its quality.
- Label and Date: Place a label or write the date of freezing on the bags or containers to help you remember how fresh it is. Use best quality within 2-3 months.
- Reheating From Frozen: If you want to use when you’re ready to serve, re-heat from frozen, either from the air fryer or the oven without defrosting. You may want to cook them a little longer.
Are Artichoke Hearts Poisonous?
There’s part of the artichoke you’re not supposed to eat, though it’s not lethal or anything.
The spiky, hairy insides of the artichoke, the fluffy middle part, which is natively called the “choke,” is called that because you can choke on it.
Get out and throw away the choke of your artichokes before or right after you cook them. The rest of the artichoke heart is also great and good to eat.
The artichoke’s hard stem and exterior leaves should not be attempted either. They’re not dangerous, but they are fibrous and wooden can’t be assimilated.
How do you eat artichokes?
Begin by peeling away the outer leaves of a leaf and dipping the wide end of the leaf into your sauce of choice (we like using this Easy Garlic Dip or Blue Cheese Dip). A great alternative is alíoli.
Eat the leaf by pulling it through your front teeth to discard the soft part that you have covered with sauce. Throw the rest away.
Best of all, when you have pulled off all of the leaves, you will still have one superb part: the heart of the artichoke. We did not take the fuzz off of these before we cooked them, so just know it is there. Use a spoon to gently lift the fluff and move the spoon around until the fluff is all gone. Simply pinch the fluff and pull it out by hand.
How to Pick Out Artichokes
Check out what makes an excellent artichoke at the store if you want your artichokes in the air fryer to turn out wonderfully! Listed below are a few tips to help you out.
- Look for artichokes with deep green leaves that are have a just-blossomed appearance when going for the best tasting batch. It’s fine if the tips of them are brown in places. It’ll get very flavorful as it cooks.”
- When are the artichokes in season? Artichokes are at their best in the spring and fall, so spring and fall are the best times to buy artichokes.
- Squeeze them a little! If a grown artichoke feels squishy or spongy when you press it, it’s a bit too old. You want a squeaky one.

Crispy Air Fryer Artichokes (Frozen or Fresh)

INGREDIENTS
- 4 Fresh Artichokes
- 1 Lemon
- 2 tbsps olive oil
- 1 teaspoon salt
- 1 teaspoon fresh ground black pepper
- ½ teaspoon garlic powder optional
INSTRUCTIONS
- Prepare the Artichokes: Rinse the artichokes under cold water. Trim the top quarter and cut off thorny tips. Optionally, halve the artichokes for quicker cooking.
- Make the Seasoning Mix: In a bowl, combine 2 tablespoon olive oil, minced garlic, 2 tablespoon lemon juice, and salt and pepper to taste. Add optional ingredients like Parmesan and fresh herbs if desired.
- Coat the Artichokes: Brush the artichokes with the seasoning mix, ensuring the leaves are well-coated. If halved, make sure to coat the cut side as well.
- Preheat the Air Fryer: Set your air fryer to 375°F (190°C) and allow it to preheat.
- Arrange in the Air Fryer Basket: Place the seasoned artichokes in the air fryer basket in a single layer. Avoid overcrowding for even cooking.
- Air Fry: Cook for 20-25 minutes, flipping the artichokes halfway through. They should be golden brown and crispy.
- Serve Hot: Once done, carefully remove the artichokes from the air fryer. Let them cool for a few minutes and then arrange them on a plate.
NOTES
- The size and form of artichokes might vary. Due to this, they may require different amounts of seasoning and air-frying time. For medium ones, 12–15 minutes should be adequate. Cooking time must be increased if using large ones.
- I would choose 17 to 20 minutes, but I would monitor them. Because some of the salt will come off when cooking, I also prefer to season them liberally on both sides. Lemon juice should also be used liberally.
- Use only olive oil for the finest results (I used extra virgin olive oil).
- In this situation, more pepper is preferable to less. The artichokes do get a good flavor from it.
